  • 4cupswatermelon,diced, seedless
  • 3ozfeta cheese,crumbled
  • 3cupsbaby arugula
  • ¼small red onion,chopped
  • 2tbspbalsamic vinegar
  • 2tbspextra-virgin olive oil
  • tspkosher salt
  • fresh black pepper


  1. Divide the balsamic vinegar, olive oil, salt, and black pepper equally between 4 pint-sized glass jars.

  2. Divide and layer the onion, feta, watermelon, and finish with ¾ cup of arugula.
