  • 3cupsseedless watermelon,cubed and chilled
  • ½cupcrumbled feta
  • 7ozarugula
  • ¼smallred onion,sliced very thin
  • 2tbspbalsamic vinegar
  • 2tbspextra virgin olive oil
  • kosher salt and fresh pepper

Instructions

  1. Wash arugula and dry well.

  2. In a large bowl whisk vinegar, olive oil, salt and pepper.

  3. Toss with the remaining ingredients and serve.

Recipe Notes

Arugula can be replaced with romaine, butter lettuce, watercress or mixed greens.
