  • 3cupsseedless watermelon,cubed and chilled
  • ½cupcrumbled feta
  • 7ozarugula
  • ¼smallred onion,sliced very thin
  • 2tbspbalsamic vinegar
  • 2tbspextra virgin olive oil
  • kosher salt and fresh pepper


  1. Wash arugula and dry well.

  2. In a large bowl whisk vinegar, olive oil, salt and pepper.

  3. Toss with the remaining ingredients and serve.
