How To Make Warm Potato Salad
A classic of German cuisine, this warm potato salad comes complete with bacon and fresh herbs, and tossed in a tangy and creamy dressing!

Ingredients
For Lemon Vinaigrette:
- ¼cupmayonnaise
- 1tbspdijon mustard
- 1tbsplemon juice
- 1tbsplemon rind,grated
- salt and freshly ground pepper
For Salad:
- 1tbspolive oil
- 8bacon strips
- 1½lbssmall new potatoes
- 2tbspwhite wine vinegar
- 1cupgreen onion,chopped
- 2tbspparsley,chopped
Instructions

Combine the mayonnaise, mustard, lemon juice, and rind and season with salt and pepper to taste. Reserve.

Heat the olive oil in a frying pan over medium heat. Add the bacon and sauté until crisp. Drain, reserving the bacon and 1 tablespoon of bacon fat.

Cover the potatoes with cold salted water and add 1 tablespoon of wine vinegar. Bring to boil and boil for 10 minutes or until tender. Drain well.

Return pot to burner over low heat for 1 minute, shaking to evaporate water. Add bacon, bacon fat, and the remaining 1 tablespoon of wine vinegar and toss to combine.

Add vinaigrette, green onions, and parsley and stir together. Season with salt and pepper to taste.
