How To Make Vegetarian Chili Lime Salad

This highly vegetarian chili lime salad contains beans, corn, and pepper for a rich layer of flavor and drenched in chili lime dressing that adds a kick.

Preparation: 10 minutes

For Salad:

  • 15ozblack eyed peas,(1 can), or beans, rinsed and drained
  • 15ozblack beans,(1 can), rinsed and drained
  • 15ozsweet corn,(1 can), rinsed and drained
  • ½red bell pepper,finely diced
  • ½green bell pepper,finely diced
  • ½red onion,diced
  • 2cupsgrape tomatoes,halved, or cherry tomatoes or 2 Roma tomatoes
  • 2ripe avocados,diced
  • cupcilantro,finely chopped, or parsley

For Chili Lime Dressing:

  • ¼cupolive oil
  • ¼cuplime juice,freshly squeezed
  • 2tbspcilantro,freshly chopped
  • 2clovesgarlic,crushed
  • 1tspbrown sugar
  • ¾tspred chilli flakes,or to taste
  • ½tspground cumin
  • 1tspsalt

For Serving:

  • veggie sticks,optional
  • nacho chips,optional
  • tortilla chips,optional


  1. Combine salad ingredients in a large bowl. Mix together to combine. Set aside.

  2. Whisk dressing ingredients together in a smaller bowl, until well combined.

  3. Pour dressing over salad, stir through, and serve with chips or veggie sticks. Enjoy!
