Ingredients

  • 2 cups cooked turkey, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 8 slices rye bread

Instructions

  1. In a large bowl, combine the diced turkey, cherry tomatoes, cucumber, red onion, and fresh parsley.

  2. In a small bowl, mix together the mayonnaise, Dijon mustard, and lemon juice. Season with salt and pepper.

  3. Pour the dressing over the turkey and vegetables, and toss until everything is well coated.

  4. Toast the rye bread slices.

  5. Divide the salad mixture evenly onto 4 slices of rye bread. Top with the remaining bread slices to form sandwiches.

  6. Serve immediately and enjoy!
