- 1shallot
- ¼cupwhite wine vinegar
- 3tbspextra virgin olive oil
- 1½tspsugar
- 1tbsptarragon,chopped
- 1fennel bulb
- ½english cucumber
- 2cansolive oil packed tuna
- kosher salt and freshly ground pepper
- lettuce leaves,or pita bread
Instructions

In a bowl, whisk the shallot, vinegar, oil, sugar, and tarragon. Add the fennel and cucumber and toss. Let stand for 5 minutes.

Add the tuna to the salad and season with salt and pepper.
