How To Make Tuna & Caper Panzanella

Ingredients
- 4 slices of crusty bread, cut into cubes
- 2 cans of tuna, drained
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup capers
- 1/4 cup Kalamata olives, pitted and halved
- 2 cups mixed greens
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions

Preheat oven to 350°F (175°C). Spread the bread cubes on a baking sheet and bake for 10 minutes, or until golden and crispy.

In a large bowl, combine the tuna, cherry tomatoes, red onion, capers, Kalamata olives, and mixed greens.

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the salad and toss to combine.

Add the toasted bread cubes to the salad and gently toss again.

Let the salad sit for 5 minutes to allow the flavors to meld together.
