It’s hard to pick a favorite among all the goodies in this avocado salad. It has tender pan-seared chicken, a trio of berries, & a creamy lemon dressing.

Ingredients

  • 1chicken breast,cooked and chopped
  • 3cupsromaine lettuce,chopped
  • 2cupsstrawberries,sliced
  • 1cupblueberries
  • 2cupsblackberries
  • 1avocado,chopped
  • ¼cuppistachios,chopped
  • ¼cupfeta cheese

For Creamy Lemon Poppyseed Dressing:

  • cupmayonnaise
  • ¼cupmilk
  • 3tbspsugar
  • 4tspcider vinegar
  • 1tbsplemon juice
  • 2tsppoppyseeds

Instructions

  1. In a large bowl combine chicken, romaine lettuce, strawberries, blackberries, and avocado. Toss gently. Top with pistachios, feta cheese and drizzle with creamy lemon poppyseed dressing.

Lemon Poppyseed Dressing:

  1. In a small bowl whisk mayonnaise, milk, sugar, cider vinegar, lemon juice and poppyseeds.
