Ingredients

  • 1 can (15 oz) of kidney beans, drained and rinsed
  • 1 can (15 oz) of chickpeas, drained and rinsed
  • 1 can (15 oz) of green beans, drained and rinsed
  • 1/2 red onion, thinly sliced
  • 1/2 cup of chopped fresh parsley
  • 1/4 cup of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the kidney beans, chickpeas, green beans, red onion, and parsley.

  2. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the bean mixture and toss to combine.

  4. Allow the salad to marinate in the refrigerator for at least 1 hour before serving.

  5. Serve chilled and enjoy!
