Toss this simple yet scrumptious cucumber salad, made with fresh cucumbers and ripe avocado and dressed in balsamic vinegar and olive oil.

  • 3tbspextra-virgin olive oil
  • 2tbspbalsamic vinegar
  • 2medium cloves garlic,pressed or minced
  • kosher salt and freshly ground black pepper,to taste
  • 1ripe avocado,pitted and sliced or diced
  • 12ozcucumbers,thinly sliced (4 Persian or 2 medium English cucumbers)

For Optional Additions:

  • 2cupsarugula
  • ½cupcherry tomatoes,halved
  • 2radishes,chopped

Instructions

  1. In a medium bowl, whisk together the olive oil, balsamic vinegar, and garlic until blended. Season with salt and pepper.
