Ingredients

  • 6 cups kale, stems removed and leaves thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup sunflower seeds
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, add the sliced kale, cherry tomatoes, cucumber, red onion, feta cheese, and sunflower seeds.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss well to combine.

  4. Let the salad sit for 5 minutes to allow the flavors to meld together.
