Summer Spinach and Strawberries Recipe

This is a summer salad you wouldn’t want to miss. Not only is it tasty but it’s really lite. We simply combined baby spinach with some strawberries and added a bit of natural sweet flavors to make it interesting.

Ingredients

  • 20 oz baby spinach
  • 4 cups strawberries
  • ¼ cup almonds, chopped or slivered
  • 1 tbsp butter
  • 1 tsp poppy seeds
  • 1 tsp sesame seeds
  • ¼ cup red wine vinegar
  • ¼ cup apple cider vinegar
  • ½ cup virgin olive oil, lite or extra
  • 1 tbsp honey
  • 3 tbsp sugar

Instructions

  1. In pan heat butter and cook almonds for 2 minures.
  2. Add to vinegar and oil, add poppy and sesame seeds, sugar and honey (mix well in bowl - you can make this a day before. In bowl place spinach and strawberries and mix up.
  3. 5 minutes before serving add vinegar mixture.

  4. You can also add blueberries or raspberries.
