For Salad:
- 6cupsfresh baby spinach
- 12ozstrawberries,(1 pint), hulled and sliced
- 1avocado,peeled, pitted and diced
- 4ozblue cheese,crumbled, or goat cheese, or feta
- ¼cupalmonds,toasted, sliced
- ½small red onion,thinly sliced
For Poppyseed Dressing:
- ⅓cupavocado oil,or olive oil
- 3tbspapple cider vinegar
- 2tbsphoney
- 1tbsppoppy seeds
- pinchground dry mustard,optional
- fine sea salt and freshly-cracked black pepper
Instructions
Dressing:

Whisk the avocado oil, apple cider vinegar, honey, poppy seeds, and mustard, together until combined. Add a pinch of salt and pepper, or more to taste.
To Assemble:
