This spinach salad is infused with summery flavors of tart strawberries, creamy avocados, and a tangy-sweet poppy seed dressing, for a refreshing meal!

Ingredients

For Salad:

  • 6cupsfresh baby spinach
  • 12ozstrawberries,(1 pint), hulled and sliced
  • 1avocado,peeled, pitted and diced
  • 4ozblue cheese,crumbled, or goat cheese, or feta
  • ¼cupalmonds,toasted, sliced
  • ½small red onion,thinly sliced

For Poppyseed Dressing:

  • cupavocado oil,or olive oil
  • 3tbspapple cider vinegar
  • 2tbsphoney
  • 1tbsppoppy seeds
  • pinchground dry mustard,optional
  • fine sea salt and freshly-cracked black pepper

Instructions

Dressing:

  1. Whisk the avocado oil, apple cider vinegar, honey, poppy seeds, and mustard, together until combined.  Add a pinch of salt and pepper, or more to taste.

To Assemble:

  1. Toss the spinach, strawberries, avocado, blue cheese, almonds, and onion with desired amount of dressing until combined.

  2. Serve immediately.
