Steak Fajita Salad with Avocado Dressing Recipe

How To Make Steak Fajita Salad with Avocado Dressing

Refreshingly fresh and filling, this Steak Fajita Salad is packed with fresh veggies, drizzled with a delicious dressing made of avocado, lemon, and mayo.

Preparation: 15 minutes
Cooking: 15 minutes
Total: 30 minutes

Serves:

Ingredients

  • 1flank steak
  • cuprice,cooked
  • lettuce,chopped
  • corn,sliced off the cob, grilled
  • peppers and onions,sliced, sauteed
  • tortillas,cooked
  • medium cheddar cheese,grated

For Dressing:

  • ½avocado
  • lemon juice,(from 1 lemon)
  • 1tspgarlic,minced
  • 2tbspmayonnaise
  • 2tbsphoney
  • ¼tspcumin

Instructions

  1. Heat a grill to medium-high heat and sprinkle salt and pepper on each side of the meat.

  2. Cook for 6 to 8 minutes per side.

  3. Remove from the grill and let rest for 2 to 3 minutes before slicing thin on the diagonal.

  4. Meanwhile, in a blender combine all of the dressing ingredients and blend until smooth.

  5. Set aside.

To Assemble:

  1. Sprinkle a little cheese on a tortilla and warm in a skillet until the cheese melts.

  2. Place the cheese tortilla in a bowl and top with rice, steak, corn, peppers and onions, and lettuce.

  3. Drizzle with the dressing and enjoy!

Recipe Notes

For more flavor, add a little fajita seasoning in the rice while it’s cooking if desired.
