How To Make Pear Bacon and Brussels Sprout Salad
This salad recipe is all about protein. We are using Brussel sprouts and bacon topped with a delicious vinaigrette flavored by mustard and lemon juice.
Serves:
Ingredients
- 6ozbaconchopped
- 14ozbrussels sproutsbottoms trimmed, shredded
- ½ cupfresh parsleysliced
- 1cuppecanstoasted and roughly chopped
- 2bartlett pearscored and diced small
- ½ cupgorgonzola cheese
- 2tbspshallotminced
Dressing
- 3tbspolive oil
- 2tbspbacon drippingsrendered
- 2 ½ tbsplemon juicefresh
- 1tspdijon mustard
- 1tbspmaple syrup
- salt and freshly ground black pepper
Instructions

Cook bacon in a non-stick skillet over medium-high heat until browned and just crisp, about 6 to 8 minutes. Transfer bacon to plate lined with paper towels to drain and reserve rendered bacon drippings for dressing.

In a large bowl toss together brussels sprouts, cooked bacon, parsley, pecans, pears, gorgonzola, and shallots. Toss with dressing and serve.
For the dressing:

Whisk together all dressing ingredients in a mixing bowl or shake together well in a jar. Stir or shake again just before pouring onto the salad.
