How To Make Spring Salad with Watercress Dressing

Ingredients
- 4 cups of mixed salad greens
- 1 cup of watercress, stems removed
- 1 cup of cherry tomatoes, halved
- 1/2 cup of cucumber, sliced
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of slivered almonds
- for the watercress dressing:
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 1 clove of garlic, minced
- 1 tablespoon of honey
- salt and pepper to taste
Instructions

In a large bowl, combine the salad greens, watercress, cherry tomatoes, cucumber, red onion, feta cheese, and slivered almonds.

In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, honey, salt, and pepper until well combined.

Drizzle the watercress dressing over the salad and toss gently to coat.
