This spinach salad has fresh baby spinach tossed in with crisp apples, artichoke hearts, and nuts. It is then dressed with a simple apple cider vinaigrette.

  • 2apples,cored and julienned
  • 14ozartichoke hearts,1 can, chopped
  • 1cuptoasted,or candied pecans
  • ½cupgorgonzola,or blue cheese

  1. Toss ingredients together until combined.  Serve immediately.
