Ingredients

  • 8 oz spinach leaves
  • 8 oz pasta, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sliced black olives
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup pine nuts, toasted
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine spinach leaves, cooked pasta, cherry tomatoes, red onion, feta cheese, black olives, sun-dried tomatoes, and pine nuts.

  2. In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper.

  3. Pour the dressing over the salad and toss until well-coated.

  4. Serve chilled or at room temperature.
