How To Make Spinach Salad with Mandarin Oranges
The citrusy tang of this spinach salad with mandarin oranges is perfect with the fresh veggies, savory bacon, and red wine vinaigrette!

Ingredients
For Dressing:
- ½cupred wine vinegar
- ½cupwhite sugar
- 1½tbspwater
- 1½tbspbutter
- ½tspsalt
- 1egg,beaten
For Salad:
- 10ozbaby spinach,(1 package)
- 6ozfresh mushrooms,(1 package), sliced
- 15ozmandarin oranges,(1 can), drained
- ⅓cupalmonds,toasted, slivered
- 4bacon slices,cooked, crumbled
- ¼red onion,sliced, separated into rings
- ¼cupcroutons,or as desired
Instructions

Mix the vinegar, sugar, water, butter, and salt together in a saucepan, then bring to a boil.

Cook and stir until the sugar dissolves and the mixture is bubbling. Remove from heat and cool to room temperature for about 1 hour.

Whisk the egg into the dressing, then return the saucepan to low heat and simmer for 5 to 10 minutes until the dressing thickens.

Combine the spinach, mushrooms, mandarin oranges, almonds, bacon, red onion rings, and croutons in a large bowl.

Pour the dressing over the salad. Toss to coat.
