Combining jalapenos, potatoes, and chicken breast drizzled with lime zest in this Southwestern Potato Salad dish will have you go asking for seconds!

Serves:

Ingredients

  • 2lbrusset potatoe,peeled and cut into 2” chunks
  • 2chicken breasts,chopped and cooked
  • 1jalapeno,deveined deseeded and minced
  • 1cupsweet corn
  • 15ozblack beans,drained and rinsed
  • 1cupcheddar cheese,shredded
  • 2cupscherry tomatoes,halved
  • 2avocados,diced
  • cupcilantro,chopped

For Dressing:

  • 1cupmayonnaise
  • 1tbspapple cider vinegar
  • 2limes,juiced
  • 2tbsptaco seasoning
  • ½tspkosher salt

Instructions

  1. Add potatoes and water and bring to a boil, cooking 10 to 12 minutes until potatoes are fork tender.

  2. Drain and and cool for 5 minutes.

  3. Meanwhile, make dressing: Whisk all ingredients together. Taste and add salt as desired.

  4. Stir corn, black beans, cheese, tomatoes, avocados, chicken and cilantro in with potatoes. Toss with dressing.

  5. Cover tightly and refrigerate 1 hour before serving.
