How To Make Spiced Turkey with Bulgur & Pomegranate Salad

Ingredients
- 1 lb turkey breast, sliced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup bulgur
- 1 1/2 cups vegetable broth
- 1/2 cup pomegranate seeds
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions

In a bowl, combine the olive oil, cumin, paprika, cinnamon, salt, and black pepper. Rub the spice mixture onto the turkey slices and let marinate for 10 minutes.

Meanwhile, cook the bulgur according to package instructions, using vegetable broth instead of water. Fluff the cooked bulgur with a fork and let cool.

Preheat a grill or grill pan over medium-high heat. Grill the turkey slices for 4-5 minutes per side, or until cooked through.

In a large salad bowl, combine the cooked bulgur, pomegranate seeds, parsley, mint, lemon juice, salt, and pepper. Toss to combine.
