How To Make Southwestern Black Bean Salad

A perfect side for grilled meat, fish, or chicken, this Southwestern Black Bean Salad is made with beans, corn, tomato, onion, and cilantro in lime juice.

  • 15.5ozcan black beans,rinsed and drained
  • 9ozcooked corn,fresh or frozen, thawed if frozen
  • 1medium tomato,chopped
  • cupred onion,chopped
  • 1scallion,chopped
  • 2limes,juiced
  • 1tbspolive oil
  • 2tbspfresh minced cilantro,or more to taste
  • salt and fresh pepper
  • 1medium hass avocado,diced
  • 1jalapeno,diced, optional


  1. In a large bowl, combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper.

  2. Squeeze fresh lime juice to taste and stir in olive oil. Marinate in the refrigerator for about 30 minutes.

  3. Add avocado just before serving.
