How To Make Smoky Maple Duck Salad

Ingredients
- 4 duck breasts
- 1 tbsp olive oil
- 2 tbsp maple syrup
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped pecans
- dressing:
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp maple syrup
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions

Preheat the grill or heat a skillet over medium-high heat.

Season the duck breasts with salt, pepper, and smoked paprika.

In a small bowl, mix together olive oil and maple syrup. Brush the mixture onto both sides of the duck breasts.

Grill the duck breasts for about 4-5 minutes per side, or until cooked to your desired level of doneness. Remove from heat and let rest for 5 minutes before slicing.

In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, feta cheese, and pecans.

In a separate small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper to make the dressing.

Drizzle the dressing over the salad and toss to coat.

Divide the salad evenly onto serving plates and top with sliced duck breasts.
