How To Make Shrimp and Pasta Salad

Ingredients
- 8 oz pasta
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh dill, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Cook the pasta according to package instructions. Drain and set aside to cool.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove from heat and let cool.

In a large bowl, combine the cooked pasta, shrimp, cherry tomatoes, cucumber, red onion, black olives, feta cheese, and fresh dill.

In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss gently to coat.

Serve the shrimp and pasta salad chilled and enjoy!
