How To Make Sesame Noodle Salad

Ingredients
- 8 oz soba noodles
- 1/4 cup sesame oil
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1/4 cup chopped scallions
- 2 tbsp sesame seeds
- Salt and pepper to taste
Instructions

Cook soba noodles according to package instructions. Drain and rinse with cold water.

In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, ginger, and garlic.

In a large bowl, combine cooked noodles, carrots, cucumber, and scallions. Pour dressing over the salad and toss until well coated.

Sprinkle sesame seeds over the salad and season with salt and pepper.
