How To Make Roast corn, prawn, pepper & avocado salad

Ingredients
- 2 ears of corn
- 1 pound of prawns, peeled and deveined
- 2 bell peppers (any color), sliced
- 1 avocado, diced
- 1 tablespoon of olive oil
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Preheat the grill to medium-high heat.

Remove the husks from the corn and brush with olive oil.

Grill the corn on all sides until slightly charred, about 10 minutes. Let cool, then cut the kernels off the cob.

In a separate bowl, toss the prawns with olive oil, lime juice, salt, and pepper.

Grill the prawns for 2-3 minutes on each side until they turn pink and opaque.

In a large bowl, combine the corn kernels, grilled prawns, sliced peppers, and diced avocado.

Drizzle with extra olive oil and lime juice. Season with salt and pepper to taste.

Toss gently to combine all the ingredients.

Garnish with freshly chopped cilantro.
