  • 1cupgrape tomatoes,quartered
  • 15ozgarbanzo beans,rinsed and drained
  • 1cupquinoa,cooked
  • 2tbspred onion,minced
  • 2tbspcilantro,minced
  • limes,juiced
  • Kosher salt and fresh pepper,to taste
  • 1cupcucumber,diced
  • 4ozavocado,diced, 1 medium hass


  1. Combine all the ingredients except for avocado and cucumber, season with salt and pepper to taste.

  2. Keep refrigerated until ready to serve.

  3. Just before serving, add cucumber and avocado.
