  • 15ozblack beans,1 can, rinsed and drained
  • 15ozcorn,1 can, drained
  • 1tomato,large, diced
  • cupsMonterey Jack cheese,grated, or more to taste
  • 4ozblack olives,1 can, sliced
  • ½cupfire-roasted red peppers,diced
  • ½lime,juiced
  • 2tbspcilantro,chopped
  • ½tspsalt
  • ½tspground cumin


  1. Combine the black beans, corn, tomato, Monterey Jack cheese, olives, red peppers, lime, cilantro, salt, and cumin in a large bowl.

  2. Stir well to combine.
