How To Make Prawn, grapefruit & avocado salad

Ingredients
- 250g prawns, peeled and deveined
- 1 grapefruit, segmented
- 1 avocado, sliced
- 1/4 red onion, thinly sliced
- 2 cups mixed salad greens
- 1/4 cup chopped fresh cilantro
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- Salt and pepper, to taste
Instructions

Heat a grill pan or skillet over medium-high heat. Season the prawns with salt and pepper. Cook the prawns for 2-3 minutes on each side until pink and cooked through. Remove from heat and set aside.

In a large salad bowl, combine the grapefruit segments, avocado slices, red onion, salad greens, and cilantro.

In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper.

Pour the dressing over the salad and toss gently to combine.

Divide the salad evenly among 4 plates and top with the grilled prawns.
