Ingredients

  • 4 medium-sized potatoes, boiled and cubed
  • 10 radishes, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the boiled potatoes, sliced radishes, red onion, and fresh parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the potato and radish mixture and toss gently to coat.

  4. Adjust the seasoning if necessary.

  5. Serve chilled and enjoy!
