  • 6 cups mixed greens, washed and dried
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • dressing:
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, sliced almonds, and dried cranberries.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper to make the dressing.

  3. Drizzle the dressing over the salad and toss gently to combine.

  4. Serve the mixed greens salad immediately and enjoy!
