- 6 cups mixed greens, washed and dried
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup sliced almonds
- 1/4 cup dried cranberries
- dressing:
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and pepper to taste
Instructions

In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, sliced almonds, and dried cranberries.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper to make the dressing.
