Ingredients

  • 4 fillets of beef, about 6 oz each
  • 2 tbsp black peppercorns, crushed
  • 1 tsp salt
  • 2 tbsp olive oil
  • 4 artichoke hearts
  • 1 lemon, juiced
  • 2 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.

  2. Season the fillets of beef with crushed peppercorns and salt, pressing the pepper into the meat.

  3. Heat the olive oil in a skillet over medium-high heat. Sear the fillets on each side for about 2-3 minutes, or until desired doneness.

  4. Remove the fillets from the skillet and let them rest for a few minutes.

  5. Meanwhile, brush the artichoke hearts with lemon juice and grill them until charred, about 3 minutes per side. Slice them into quarters.

  6. In a large bowl, combine the mixed salad greens, cherry tomatoes, and red onion.

  7. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the dressing.

  8. Drizzle the dressing over the salad and toss to coat.

  9. Serve the peppered fillets of beef with the grilled artichoke salad on the side.
