This Pear, Raspberry and Pistachio Salad combines sweet pear and raspberries, romaine, and crunchy pistachios, all tossed in a tasty poppyseed dressing!

Ingredients

  • 4cupsromaine,chopped
  • 1cupraspberries
  • 2pears,thinly sliced
  • ½cuppistachios,shelled
  • ½cupfeta cheese,crumbled

For Creamy Poppyseed Dressing:

  • cupmayonnaise
  • ¼cup2% milk
  • 3tbspsugar
  • 4tspcider vinegar
  • 2tsppoppy seeds

Instructions

  1. Whisk together in a small bowl the mayonnaise, milk, sugar, cider vinegar, and poppyseeds.

  2. Set aside.

  3. In a large bowl, add the romaine, raspberries, pears, pistachios, and feta cheese. Toss the salad.

  4. Add the poppyseed dressing and carefully toss to coat all of the ingredients.

  5. Serve immediately.
