- 4cupsbaby arugula
- 3medium peaches,ripe, pitted and sliced
- ¾cupyellow bell pepper,diced
- 3tbspwalnuts,chopped
- 1tbspextra virgin olive oil
- 1tbspbalsamic vinegar
- ½tbsplemon juice,fresh squeezed
- ⅛tsplemon zest
- ⅛tspkosher salt
- Fresh black pepper,to taste

Place the arugula in a large bowl, top with peaches, yellow pepper and walnuts. In a small bowl whisk the olive oil with the balsamic, lemon juice, salt and pepper and drizzle over the salad.
