How To Make Peach Arugula Salad

This easy and delicious arugula salad is topped with peach, yellow bell peppers, and walnuts, drizzled with balsamic vinaigrette. All done in 10 minutes!

Ingredients

  • 4cupsbaby arugula
  • 3medium peaches,ripe, pitted and sliced
  • ¾cupyellow bell pepper,diced
  • 3tbspwalnuts,chopped
  • 1tbspextra virgin olive oil
  • 1tbspbalsamic vinegar
  • ½tbsplemon juice,fresh squeezed
  • tsplemon zest
  • tspkosher salt
  • Fresh black pepper,to taste

Instructions

  1. Place the arugula in a large bowl, top with peaches, yellow pepper and walnuts. In a small bowl whisk the olive oil with the balsamic, lemon juice, salt and pepper and drizzle over the salad.
