- 1tbspsherry vinegar
- 1tspmayonnaise
- salt and ground black pepper,to taste
- 1head escarole,small, cut into 1-inch ribbons
- 1peach,sliced
- 4ozgoat cheese,crumbled
- ½cupwalnuts,toasted

Whisk olive oil, rice vinegar, sherry vinegar, mayonnaise, salt, and black pepper in a bowl until smooth.
