How To Make Southwest Pasta Salad
A colorful and flavorful pasta salad with a Southwest twist!
Serves:
Ingredients
- 8 oz rotini pasta
- 1 can black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 red bell pepper, chopped
- 1/4 red onion, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup ranch dressing
- 1/4 cup salsa
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions

Bring a pot of salted water to a boil and cook pasta according to directions on package. Drain and rinse with cold water.

In a large bowl, mix together pasta, black beans, corn, red pepper, red onion, and cilantro.

In a small bowl, whisk together ranch dressing, salsa, lime juice, salt, and pepper.

Pour dressing over pasta mixture and toss until well combined.

Refrigerate for at least 30 minutes to allow flavors to meld together.
