A simple yet wonderfully tasty pasta salad with the amazing flavors of tomato and basil. A refreshing salad with quite a bit of heft to it that it's good enough to be a meal on its own.

Ingredients

  • 10 oz shell pasta, cooked and well drained
  • 6 plum tomatoes, juices reserved
  • 1 bunch scallions, minced
  • 4 garlic cloves, crushed
  • ¼ cup extra virgin olive oil
  • ¼ cup parsley, chopped
  • 3 tbsp basil, chopped
  • salt
  • freshly ground black pepper
  • 1 cup olives, chopped
  • ½ cup Parmesan cheese, freshly grated

Instructions

  1. Combine all of the ingredients in a large bowl.
  2. Serve immediately at room temperature, or cover and refrigerate for up to 24 hours before serving.
