How To Make Pasta Cobb Salad
On this filling and fully loaded take on Cobb salad, pasta is mixed in with chicken, crunchy cucumbers, and fresh tomatoes, tossed in a tangy vinaigrette!
Serves:
Ingredients
- ½cupdry pasta
- 6bacon strips
- 6cupsmixed lettuce leaves,roughly chopped
- 3eggs,boiled, peeled and quartered
- 2chicken breasts,grilled and diced
- 1cupcherry tomatoes,halved
- 2cucumbers,deseeded and diced
- 2ozblue cheese
For Red Wine Vinaigrette:
- ¼cupred wine vinegar
- ½cupolive oil
- 1tbsphoney
- 1tbspdijon mustard
- ¾tspsalt
- ½tsppepper
Instructions

Cook pasta according to package directions till al dente. Drain, rinse with cold water to keep the pasta from sticking together and set aside.

Cook the bacon till crispy and remove from the pan. Drain on a paper towel and cut into small dices once cool. Set aside.

Add all the ingredients for the vinaigrette and shake till combined and emulsified.

To assemble the salad, add lettuce to a large bowl. Add all the toppings on top including pasta, bacon, eggs, chicken, cherry tomatoes, cucumber and blue cheese.

Serve with the dressing, and enjoy!
