Padre Prawns with Strawberry-Jalapeno Dressing Recipe

A colorful, zesty healthy prawn salad…Yummy!

  • 15 large tiger prawns
  • 1/2 lb spring greens salad mix
  • 2 tsp sesame oil
  • 2 tbsp sunflower oil
  • 1/2 tsp salt
  • 2 fat jalapeno peppers, deseeded and finely chopped
  • 1/2 lb strawberries, hulled and chopped

For Dressing:

  • 1/4 cup cider vinegar
  • 1/4 cup sugar or splenda


  1. Carefully remove the shells from the prawns, leaving the tails intact. 

  2. Drain the prawns then butterfly them by cutting down their back, almost right through, and opening them out flat.

  3. Set the grill to high. While waiting for the grill to heat up, mix the sesame and vegetable oils together with the salt. Then rub the salt into the prawns and thread them onto the skewers.

  4. Put the jalapenos, strawberries, vinegar, and sugar into a food processor and whizz them to a purèe. Once you're done, chill them in the meantime. 

  5. Grill the prawns for 1 minute on each side. Afterward, lower the heat to medium and grill them for another 1 minute.

  6. Plate and arrange the salad and place the skewered prawns on top. Then drizzle them with dressing and serve. Enjoy!
