
How To Make Orzo Salad

Ingredients
- 8ozorzo pasta,dried, cooked in salted water according to package directions, cooled
- 1½cupscucumber,diced
- 1cupcherry tomatoes,halved
- 1cupchickpeas
- ¼cupred onion,minced
- ½cupfeta cheese,crumbled
- ¼cupfresh parsley,chopped
- 6tbspolive oil
- 1tbsplemon juice
- 1tbspred wine vinegar
- 1tspdijon mustard
- ¼tspgarlic powder
- ¼tsporegano,dried
- salt and pepper,to taste
Instructions

Place the orzo pasta, cucumber, cherry tomatoes, chickpeas, red onion, parsley and feta cheese in a large bowl.

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic powder, oregano and salt and pepper.

Pour the dressing over the pasta mixture, then toss to coat.
