In this salad recipe, we are going to make a Mexican twist out of the classic Caesar’s salad. Get some tortilla chips ready and some pepitas and enjoy!

- 6cupskale leaves
- 4cupsRomaine lettuce
- 1cupfried tortilla strips
- ½cup fresh cilantro leaveschopped
- â…“cup toasted pepitasÂ
- 1pcavocadopeeled, pitted and thinly sliced
- 1cupGreek Yogurt Caesar Dressing which I recommend making with lime juice, instead of lemon juice, for this recipe
- 1cupcrumbled cotija cheese

Combine kale, Romaine, tortilla strips, cilantro, pepitas, and avocado in a large mixing bowl.

Drizzle evenly with the Caesar dressing, and toss to combine.

Serve immediately, sprinkled with crumbled cotija or queso fresco.
