Serve this Mediterranean pasta salad with two types of tomatoes, a delicious piece of olive, and fresh cucumber for an amazing mix of flavors.

Ingredients
- 8ozrotini pasta
- 1cuptomatoes,chopped
- 1cupcucumbers,sliced
- ¼cupsundried tomatoes,oil packed, drained
- ½cupkalamata olives,or black olives
- 1cupchickpeas,drained and rinsed
- ¼cupred onion,diced
- ½cupfeta cheese,crumbled
- 1cupartichokes,diced and drained
- 1tbspFresh PParsley,Fresh
For Greek Dressing:
- 3tbspwine vinegar,red
- â…“cupolive oil,light, or vegetable oil
- 1tbsplemon juice
- 1tsphoney
- 1tspdijon mustard
- ½tsporegano
- ¼tspgarlic powder
- salt & pepper,to taste
Instructions

Cook pasta according al dente according to package directions. Run under cold water to stop cooking.

Combine dressing ingredients in a jar with a tight fitting lid and shake well to combine.

Place all salad ingredients in a large bowl. Top with dressing and mix well.

Refrigerate at least 1 hour before serving. Garnish with extra feta cheese and parsley if desired.
