How To Make Mediterranean Pasta Salad

Serve this Mediterranean pasta salad with two types of tomatoes, a delicious piece of olive, and fresh cucumber for an amazing mix of flavors.

  • 8ozrotini pasta
  • 1cuptomatoes,chopped
  • 1cupcucumbers,sliced
  • ¼cupsundried tomatoes,oil packed, drained
  • ½cupkalamata olives,or black olives
  • 1cupchickpeas,drained and rinsed
  • ¼cupred onion,diced
  • ½cupfeta cheese,crumbled
  • 1cupartichokes,diced and drained
  • 1tbspFresh PParsley,Fresh

For Greek Dressing:

  • 3tbspwine vinegar,red
  • cupolive oil,light, or vegetable oil
  • 1tbsplemon juice
  • 1tsphoney
  • 1tspdijon mustard
  • ½tsporegano
  • ¼tspgarlic powder
  • salt & pepper,to taste


  1. Cook pasta according al dente according to package directions. Run under cold water to stop cooking.

  2. Combine dressing ingredients in a jar with a tight fitting lid and shake well to combine.

  3. Place all salad ingredients in a large bowl. Top with dressing and mix well.

  4. Refrigerate at least 1 hour before serving. Garnish with extra feta cheese and parsley if desired.
