  • ¼cupolive oil
  • ¼cupred wine vinegar
  • 1tbspdried oregano
  • 1tbspgarlic,chopped
  • 15ozchickpeas,(1 can), drained
  • 6ozsmall black olives,(1 can), drained
  • 6ozmarinated artichoke hearts,(1 jar), drained
  • 6ozroasted red peppers,(1 jar), drained, chopped
  • 3ozfeta cheese,crumbled
  • oznon pareil capers,rinsed, drained
  • 10ozdolmas grape leaves,(1 jar), drained, rinsed


  1. Whisk together the oil, vinegar, oregano, and garlic for the dressing in a small bowl until blended.

  2. Mix together the chickpeas, olives, artichoke hearts, roasted red peppers, feta cheese, and capers in a large bowl. Add the dressing and toss to coat.

  3. Serve with dolmas, if desired. Enjoy!
