If you want a meatless dish, try this Mediterranean couscous salad made with ripe tomatoes, cucumber, and bell peppers then sprinkled with herbs and cheese.

Serves:

Ingredients

  • ¾cupcouscous
  • 1tbspbutter
  • ¾cupwater
  • 1cuptomatoes
  • 1cupcucumber ,sliced
  • 1bell pepper ,chopped
  • ¼cupred onion,thinly sliced
  • cupfeta cheese,crumbled
  • cupflat leaf parsley,chopped

For the dressing:

  • 3tbspolive oil
  • 2tbspred wine vinegar
  • 1tbspFresh Lemon Juice
  • tsphoney
  • 1clovegarlic,minced
  • salt & pepper ,to taste

Instructions

  1. Bring water, butter, and a pinch of salt to a boil. Add couscous, stir and cover. Remove from heat and let it sit for 5 minutes.

  2. Meanwhile, place all dressing ingredients in a jar and shake well to combine.

  3. Place couscous in a large bowl and fluff with a fork. Allow to cool completely.

  4. Add remaining salad ingredients and dressing. Toss to combine and serve.
