Ingredients

  • 1½cupsgrape tomatoes,chopped
  • 1cupcarrots,diced
  • 1cupyellow bell pepper,chopped
  • 1½cupscucumber,chopped
  • 1cupgreen cabbage,or red cabbage, chopped
  • 1cupcauliflower,pieces
  • 1cupzucchini
  • 1½tbspfresh dill,chopped
  • 2tbspfresh parsley

For Dressing:

  • ½cupvegetable oil
  • 3tbspred wine vinegar
  • 1tspdijon mustard
  • ½tspItalian seasoning
  • 1tspsugar
  • salt and pepper

Instructions

Dressing:

  1. Combine the vegetable oil, red wine vinegar, dijon mustard, Italian seasoning, sugar, salt, and pepper in small bowl or jar.

  2. Whisk or shake to combine.

Salad:

  1. Chop the grape tomatoes, carrots, yellow bell pepper, cucumber, cabbage, cauliflower, zucchini, dill, parsley, then place them in a large bowl.

  2. Toss the vegetables with the dressing.

  3. Refrigerate for at least 2 hours, stirring occasionally.

  4. Serve, and enjoy!
