- 1½cupsgrape tomatoes,chopped
- 1cupcarrots,diced
- 1cupyellow bell pepper,chopped
- 1½cupscucumber,chopped
- 1cupgreen cabbage,or red cabbage, chopped
- 1cupcauliflower,pieces
- 1cupzucchini
- 1½tbspfresh dill,chopped
- 2tbspfresh parsley
For Dressing:
- ½cupvegetable oil
- 3tbspred wine vinegar
- 1tspdijon mustard
- ½tspItalian seasoning
- 1tspsugar
- salt and pepper
Instructions
Dressing:

Combine the vegetable oil, red wine vinegar, dijon mustard, Italian seasoning, sugar, salt, and pepper in small bowl or jar.

Whisk or shake to combine.
Salad:

Chop the grape tomatoes, carrots, yellow bell pepper, cucumber, cabbage, cauliflower, zucchini, dill, parsley, then place them in a large bowl.

Toss the vegetables with the dressing.
