For the Salad:

  • 2 lbs spinach leaves, fresh and torn into bite sized pieces
  • 16 oz mandarin oranges, (2 cans) drained
  • 1 lb chicken breasts, grilled or baked
  • 1 cup feta cheese, or any other cheese of choice

For the Dressing:

  • ¼ cup dry red wine
  • ½ cup vegetable oil
  • ¼ cup sugar
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dry mustard


  1. In a bowl, toss the spinach, mandarin oranges, chicken breasts, and feta cheese together.

  2. In a separate bowl, combine the red wine, vegetable oil, sugar, salt, pepper, and dry mustard until well-combined.

  3. Drizzle the red wine dressing on the salad and toss once again.
