How To Make Low-Fat Taco Salad

Enjoy this healthier taco salad for a scrumptious and low-fat rendition. Vegetarian ground beef and non-fat cheese are combined for a delightful bite.

  • 1tbsplight olive oil
  • 2garlic cloves,minced
  • 14½ozdiced tomatoes,(1 can)
  • 12ozvegetarian ground beef crumbles,(1 package), such as MorningStar Farms® Griller’s Recipe Crumbles®
  • 1oztaco seasoning,(1 package)
  • 6cupslettuce,shredded
  • 2cupsnon fat cottage cheese
  • 1cupnon fat cheddar cheese,shredded
  • 2tbsptaco sauce,or to taste


  1. Heat the olive oil in a skillet over medium-high heat. Sauté the garlic in hot oil for about 2 minutes until fragrant and slightly softened.

  2. Add the diced tomatoes, vegetarian ground beef crumbles, and taco seasoning; cook and stir for about 10 minutes until tomatoes are soft.

  3. Divide the lettuce between 2 bowls and top each with half the tomato mixture. Surround the tomato mixture with cottage cheese and sprinkle Cheddar cheese over the top. Season with taco sauce.

  4. Serve and enjoy.
