- 1tbsplight olive oil
- 2garlic cloves,minced
- 14½ozdiced tomatoes,(1 can)
- 12ozvegetarian ground beef crumbles,(1 package), such as MorningStar Farms® Griller’s Recipe Crumbles®
- 1oztaco seasoning,(1 package)
- 6cupslettuce,shredded
- 2cupsnon fat cottage cheese
- 1cupnon fat cheddar cheese,shredded
- 2tbsptaco sauce,or to taste
Instructions

Heat the olive oil in a skillet over medium-high heat. Sauté the garlic in hot oil for about 2 minutes until fragrant and slightly softened.

Add the diced tomatoes, vegetarian ground beef crumbles, and taco seasoning; cook and stir for about 10 minutes until tomatoes are soft.

Divide the lettuce between 2 bowls and top each with half the tomato mixture. Surround the tomato mixture with cottage cheese and sprinkle Cheddar cheese over the top. Season with taco sauce.
