How To Make Lobster Asparagus Chopped Salad

This delicious asparagus chopped salad offers a twist as it’s served with lobster, tossed with asparagus and tomatoes, then drizzled with lemon dressing!

Serves:

Ingredients

  • 8ozfresh cooked lobster,(from 2 to 1¼ lb lobsters), chopped
  • cupsasparagus,chopped
  • 4tspextra-virgin olive oil
  • 2tbspfresh lemon juice
  • ¼tspkosher salt
  • black pepper,to taste
  • ½cupcherry tomatoes,quartered
  • 2tbspred onion,diced
  • 1basil leaf,chopped

Instructions

  1. Bring a medium pot of water to a boil, add the asparagus and cook for about 2 to 3 minutes, until tender yet firm

  2. Drain and run under cold water to stop from cooking further. Set aside.

  3. In a small bowl combine the oil, lemon juice, salt, and pepper.

  4. In a large bowl combine the asparagus, lobster, tomatoes, red onion, basil, and dressing.

  5. Divide equally in 2 bowls and eat right away.
