
How To Make Lime Shrimp and Avocado Salad
Put together a quick, refreshing dish with this avocado salad. It’s made with tomato, shrimp, and jalapeno, tossed in lime juice with red onions.

Ingredients
- ¼cupred onion,chopped
- 2limes,juiced
- 1tspolive oil
- ¼tspkosher salt
- black pepper,to taste
- 1lbshrimp,jumbo, cooked, peeled, chopped
- 1medium tomato,diced
- 1medium hass avocado,(about 5 oz), diced
- 1jalapeno,seeds removed, diced fine
- 1tbspcilantro,chopped
Instructions

In a small bowl combine red onion, lime juice, olive oil, salt and pepper. Let them marinate for at least 5 minutes to mellow the flavor of the onion.

In a large bowl combine chopped shrimp, avocado, tomato, jalapeño.

Combine all the ingredients together, add cilantro, and gently toss. Adjust salt and pepper to taste.
