How To Make Lemon Parmesan Kale Salad

This healthy kale salad garnished with lemon and Parmesan cheese is a delicious and nutritious salad filled with fresh and zesty flavors you won’t forget.

  • 3cupskale,fresh, chopped
  • 1tbspolive oil
  • 1tbsplemon juice
  • ½tspthyme,dried
  • pinchsalt and freshly-ground black pepper
  • ¼cupParmesan cheese,freshly-grated
  • ¼cupbread crumbs,toasted, optional


  1. In a large bowl, whisk together the olive oil, lemon juice, thyme, salt, and pepper.  Add the kale, Parmesan cheese, and bread crumbs, if using, and toss until the kale is evenly coated.

  2. Massage the dressing into the kale with your fingers for an extra minute or two until the kale is soft and dark green.

  3. Serve immediately.

Recipe Notes

This recipe would also be great with some chopped or sliced fresh fruit added in, such as peaches, plums, apples, or blackberries. It would also be delicious with some toasted pecans, almonds, or walnuts added in.
